- 12 oz rigatoni pasta
- 1 lb Italian sausage (mild or spicy)
- 4 cloves garlic, minced
- 28 oz canned whole peeled tomatoes (crushed)
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
Instructions
- Gather all ingredients and chop garlic and any additional vegetables.
- In a large skillet, heat olive oil over medium-high heat. Add sausage and cook until browned (7-10 minutes), breaking apart as it cooks.
- Reduce heat to medium-low; add minced garlic and sauté until fragrant (1 minute). Add spinach and stir until wilted (2-3 minutes).
- Pour in crushed tomatoes and Italian seasoning. Simmer for 10-15 minutes, stirring occasionally.
- Cook rigatoni according to package instructions until al dente (8-10 minutes); drain.
- Combine cooked rigatoni with the sauce in the skillet. Toss gently to coat the pasta evenly. Serve hot topped with grated Parmesan cheese.
