- 1 ½ cups crushed chocolate cookies
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- ½ cup Baileys Irish Cream
- 1 cup heavy whipping cream
- ¼ cup unsweetened cocoa powder
- chocolate chips for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Combine crushed cookies and melted butter in a bowl. Press the mixture into a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes until set. Allow it to cool completely.
- In a large bowl, beat softened cream cheese until smooth. Gradually mix in powdered sugar on low speed.
- Add Baileys and cocoa powder, mixing until well combined.
- In another bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the chocolate mixture.
- Pour filling into the cooled crust and smooth the top with a spatula. Chill in the refrigerator for at least four hours or overnight before serving.
