  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup Baileys Irish Cream
  • 1 cup heavy whipping cream
  • ¼ cup unsweetened cocoa powder
  • chocolate chips for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed cookies and melted butter in a bowl. Press the mixture into a 9-inch springform pan to form the crust.
  2. Bake the crust for 10 minutes until set. Allow it to cool completely.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually mix in powdered sugar on low speed.
  4. Add Baileys and cocoa powder, mixing until well combined.
  5. In another bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the chocolate mixture.
  6. Pour filling into the cooled crust and smooth the top with a spatula. Chill in the refrigerator for at least four hours or overnight before serving.
