- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 lb fresh asparagus, trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
- For the Sauce: ¼ cup low-sodium soy sauce
- 2 tbsp honey
- ½ tsp cayenne pepper (optional)
Instructions
- Prepare your ingredients by washing the asparagus and cutting chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add chicken pieces, seasoning with salt and pepper. Cook until golden brown.
- Add minced garlic and chopped asparagus to the skillet. Stir-fry for about 3-5 minutes until asparagus is bright green and tender-crisp.
- In a small bowl, whisk together soy sauce, honey, and lemon juice. Pour over chicken and veggies, tossing gently to coat.
- Let simmer for another couple of minutes before serving warm over rice or noodles.
