  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup rolled oats
  • 1 medium onion, chopped
  • 1 cup bell peppers, finely chopped
  • 2 tsp garlic powder
  • 2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)
  • Lettuce (for topping)
  • 1 large tomato, sliced
  • Burger buns

Instructions

  1. In a mixing bowl, mash the rinsed black beans with a fork until slightly chunky.
  2. Add rolled oats, chopped onions, bell peppers, garlic powder, cumin, salt, and pepper. Mix until well combined.
  3. Form the mixture into patties about half an inch thick.
  4. Heat olive oil in a skillet over medium heat. Cook patties for about 5 minutes on each side until golden brown and crispy.
  5. Toast burger buns until golden brown. Assemble by placing lettuce on the bottom bun followed by the patty and sliced tomato.
  6. Top with the other half of the bun and serve with your favorite sides.
