- 1 cup uncooked wild rice
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 tsp dried thyme (or 1 tbsp fresh thyme)
- Salt and pepper to taste
Instructions
- Gather all ingredients for efficient cooking.
- In a large pot over medium heat, drizzle olive oil and sauté onions, celery, and carrots until softened (about 5 minutes).
- Add minced garlic and cook until fragrant (30 seconds).
- Add chicken breasts and broth; bring to a boil.
- Stir in wild rice and thyme; reduce heat to low and simmer uncovered for about 45 minutes until rice is tender.
- Remove chicken, shred it with forks, then return to the pot along with heavy cream. Stir well.
