Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown. Remove from skillet.
- Sauté minced garlic in the same skillet until fragrant, about 1 minute.
- Pour in chicken broth, bringing it to a simmer. Stir in heavy cream until blended.
- Add rinsed rice and vegetables; mix well. Return chicken to the skillet, cover, and let simmer for about 20 minutes until rice is cooked and creamy.
- Adjust seasoning if needed before serving hot.
