- 2 salmon fillets (about 6 oz each)
- 1 ripe avocado
- 1 cup cooked quinoa or rice
- ½ cucumber, thinly sliced
- 4 radishes, thinly sliced
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- Juice of 1 lime
- Fresh cilantro or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat salmon fillets dry, season with salt and pepper, and drizzle with olive oil.
- Place fillets skin-side down on the baking sheet and bake for 12-15 minutes until flaky.
- While the salmon bakes, cook quinoa or rice according to package instructions; fluff and season lightly.
- Slice cucumbers and radishes; prepare avocado by slicing it open and removing the pit.
- In a small bowl, mix soy sauce, sesame oil, and lime juice. Adjust seasoning as desired.
- Assemble bowls with quinoa or rice as the base topped with salmon, avocado, cucumber, radishes, and drizzle sauce over everything.
